Dear Mr. Waddell:
The USDA can allow inspected establishments to operate with a cistern for water supply
storage. However, the following requirements must be met:
1. The cistern must be constructed with acceptable materials, eg. s.ainless steel.
2. The system must contain an automatic chlorination device with an alai:n which
will sound if it malfunctions.
3. The water must be originally obtained from a tested potable source.
4. Water entering the plant from the system must be periodically tested for
potability.
Please understand that USDA's Food Safety and Inspection Service expects and insists
that all water used to process meat and poultry and to sanitize the facility be ample in
supply and potable at all times.
Yours truly,
Dr. Dale Hansen
