RE: HOTEL/RESTAURANT LIQUOR LICENSE APPLICATION - SIMON RYU, DBA SIMON'S
BAR AND GRILL
A public hearing was conducted on March 11, 1998, at 9:00 a.m., with the following present:
Commissioner Constance L. Harbert, Chair
Commissioner W. H. Webster, Pro-Tem
Commissioner George E. Baxter
Commissioner Dale K. Hall
Commissioner Barbara J. Kirkmeyer
Also present:
Acting Clerk to the Board, Esther Gesick
County Attorney, Bruce Barker
The following business was transacted:
I hereby certify that pursuant to a notice dated February 18, 1998, and duly published February 25,
1998, in the Platteville Herald, a public hearing was conducted to consider the application of Simon
Ryu, dba Simon's Bar and Grill for a Hotel/Restaurant Liquor License. Bruce Barker, County
Attorney, made this a matter of record. Mr. Barker stated Deputy Bill Wagner posted the sign at
the establishment on February 25, 1998, and Commissioner Webster inspected the site and
completed a report of investigation on March 9, 1998. Mr. Barker explained the law requires a
decision be made based on the following criteria: 1) the reasonable requirements of the
neighborhood will be met by granting of the license; 2)the applicant is of good moral character; and
3) the desires of the inhabitants of the neighborhood will be met. Mr. Barker stated the
establishment will be located within the existing Travel Lodge.
Joseph Bodine, Attorney, represented the applicant and stated the neighborhood will benefit from
a more extensive menu than that of the other existing establishment in the area, El Rodeo
Nightclub. Mr. Bodine stated Mr. Ryu previously worked for the Defense Intelligence Agency, was
born in Korea, and referred to the letters of character submitted. Mr. Bodine stated the
establishment will be located in a growing business area and anticipates the inhabitants will desire
the quality business Mr. Ryu will bring to the area. There was no public input concerning this
matter. Commissioner Kirkmeyer moved to approve the Hotel/Restaurant Liquor License
Application for Simon Ryu, dba Simon's Bar and Grill. Commissioner Webster seconded the
motion and stated he met with Mr. Ryu, toured the facility, it met specifications, and stated it will
be an asset to the area. The motion carried unanimously.
