RE: APPROVAL OF TEMPORARY PERMIT FOR A HOTEL AND RESTAURANT LIQUOR
LICENSE FOR SIMON CORPORATION, DBA SIMON'S BAR AND GRILL
WHEREAS, the Board of County Commissioners of Weld County, Colorado, pursuant to
Colorado statute and the Weld County Home Rule Charter, is vested with the authority of
administering the affairs of Weld County, Colorado, and
WHEREAS, Simon Corporation, dba Simon's Bar and Grill, 3815 Highway 119,
Longmont, Colorado 80504, has presented to the Board of County Commissioners of Weld
County, Colorado, an application for a Change of Ownership of a Hotel and Restaurant Liquor
License, for the sale of malt, vinous and spirituous liquors for consumption by the drink on the
premises only, said License previously held by Simon Ryu, dba Simon's Bar and Grill, and
WHEREAS, Section 12-47-303, C.R.S., allows for the issuance by the Board of County
Commissioners of a temporary permit to the transferee of an existing liquor license to authorize
the transferee to conduct business and sell alcoholic beverages at retail in accordance with said
license, subject to compliance with certain conditions, and
WHEREAS, Simon Corporation has complied with all of the conditions set forth in said
Section, and
WHEREAS, Simon Corporation has also submitted the required application fee for said
temporary permit of$100.00.
NOW, THEREFORE, BE IT RESOLVED by the Board of County Commissioners of
Weld County, Colorado, that having considered said request for a Temporary Permit, does
hereby grant to Simon Corporation, dba Simon's Bar and Grill, 3815 Highway 119, Longmont,
Colorado 80504, a Temporary Permit to conduct business and sell malt, vinous and spirituous
liquors for consumption by the drink on the premises only, at retail at said location in
accordance with the license previously held by Simon Ryu, dba Simon's Bar and Grill, subject
to all other rules and regulations set forth by the Board of County Commissioners of Weld
County, Colorado, for a period of 120 days, or until such time as the application for Change of
Ownership is finalized, whichever shall occur first.
BE IT FURTHER RESOLVED by the Board that the Chair be, and hereby is, authorized
to sign said permit.

The above and foregoing Resolution was, on motion duly made and seconded, adopted

PLEASE POST NEAR EXISTING LICENSE
TO WHOM IT MAY CONCERN:
On the 15th day of March, 2002, Simon Corporation, dba Simon's Bar and Grill, submitted to
the Board of County Commissioners of Weld County, Colorado, an application for a Change of
Ownership for a Hotel and Restaurant Liquor License, with said license previously being held by
Simon Ryu, dba Simon's Bar and Grill, and expiring on March 25, 2002. Until the Change of
Ownership has been considered by the Board of Commissioners and notification has been
received from the State advising whether this Change of Ownership request has been approved
or disapproved, the Board hereby authorizes the continued sale of malt, vinous, and spirituous
liquor at this establishment which is located at 3815 Highway 119, Longmont, Colorado 80504,
under a Temporary Permit approved by the Board on March 20, 2002. This Temporary Permit
allows Simon Corporation, dba Simon's Bar and Grill, to conduct business and sell malt, vinous
and spirituous liquors for consumption by the drink on the premises only, at retail at said
location in accordance with the license previously held by Simon Ryu, dba Simon's Bar and
Grill, subject to all other rules and regulations set forth by the Board of County Commissioners
of Weld County, Colorado, for a period of 120 days, or until such time as the application for
Change of Ownership is approved by the State of Colorado, whichever shall occur first.
