RE: APPROVAL OF TEMPORARY PERMIT FOR A HOTEL AND RESTAURANT LIQUOR
LICENSE FOR LA FIESTA MEXICAN GRILL, INC., DBA LA FIESTA MEXICAN GRILL
AND AUTHORIZE CHAIR TO SIGN
WHEREAS, the Board of County Commissioners of Weld County, Colorado, pursuant to
Colorado statute and the Weld County Home Rule Charter, is vested with the authority of
administering the affairs of Weld County, Colorado, and
WHEREAS, La Fiesta Mexican Grill, Inc., dba La Fiesta Mexican Grill, c/o Miguel Ruiz,
4322 Highway 66, Longmont, Colorado 80542, presented to the Board of County Commissioners
of Weld County, Colorado, an application for a Transfer of Ownership of a Hotel and Restaurant
Liquor License, for the sale of malt, vinous and spirituous liquors for consumption by the drink on
the premises only, said License previously held by Alfred and Caroline Lopez, dba El Vaquero, and
WHEREAS, Section 12-47-106.5, C.R.S., which became effective July 1, 1991, allows for
the issuance by the Board of County Commissioners of a temporary permit to the transferee of an
existing liquor license to authorize the transferee to conduct business and sell alcoholic beverages
at retail in accordance with said license, subject to compliance with certain conditions, and
WHEREAS, La Fiesta Mexican Grill, Inc., has complied with all of the conditions set forth
in said Section, and
WHEREAS, La Fiesta Mexican Grill, Inc., has also submitted the required application fee
for said temporary permit of $100.00.
NOW, THEREFORE, BE IT RESOLVED by the Board of County Commissioners of Weld
County, Colorado, that having examined said application and other qualifications of the applicant
for the transfer of the Hotel and Restaurant Liquor License and having considered said request for
a temporary permit, does hereby grant to La Fiesta Mexican Grill, Inc., dba La Fiesta Mexican Grill,
4322 Highway 66, Longmont, Colorado 80542, a Temporary Permit to conduct business and sell
malt, vinous and spirituous liquors for consumption by the drink on the premises only, at retail at
said location in accordance with the license previously held by Alfred and Caroline Lopez, dba El
Vaquero, subject to all other rules and regulations set forth by the Board of County Commissioners
of Weld County, Colorado, for a period of 120 days, or until such time as the application for
Transfer of Ownership is approved by the State of Colorado, whichever shall occur first.
BE IT FURTHER RESOLVED by the Board that the Chair be, and hereby is, authorized to
sign said permit.

TO WHOM IT MAY CONCERN:
On the 24th day of June, 2009, La Fiesta Mexican Grill, Inc., dba La Fiesta Mexican Grill, submitted
an application for a Transfer of Ownership for a Hotel and Restaurant, with said license previously
being held by Alfred and Caroline Lopez, dba El Vaquero, and expiring on December 20, 2009.
Until the Transfer of Ownership has been considered by the Board of Commissioners and
notification has been received from the State advising whether this Transfer of Ownership request
has been approved or disapproved, the Board hereby authorizes the continued sale of malt, vinous,
and spirituous liquor at this establishment which is located at 4322 Highway 66, Longmont,
Colorado 80542, under a Temporary Permit which has been approved by the Board on June 29,
2009. This Temporary Permit allows La Fiesta Mexican Grill, Inc., dba La Fiesta Mexican Grill, to
conduct business and sell malt, vinous and spirituous liquors for consumption by the drink on the
premises only, at retail at said location in accordance with the license previously held by Alfred and
Caroline Lopez, dba El Vaquero, subject to all other rules and regulations set forth by the Board
of County Commissioners of Weld County, Colorado, for a period of 120 days, or until such time
as the application for Transfer of Ownership is approved by the State of Colorado, whichever shall
occur first.
